Today I would like to share a delicious raw vegan recipe with you guys. I have actually created this dessert only once, but it was so good that some of my friends wanted to know the recipe, so here it is. Oh and I am so sorry about the picture, but I didn't have enough time to make more photos because I was already in a rush... (I made these squares for my friend's party).
Ingredients:
FILLING
- 120 g cashews
- 120 ml lemon juice (2 large lemons)
CRUST
- 3-4 tbs buckwheat (raw)
- 250 g dates
- 3 tbs cinnamon
- optional: -crushed almonds
How to:
1. Soak the cashews for at least 2 hours (in water).
2. Soak the dates for about 10 minutes (in water).
3. Place the buckwheat, cinnamon into a bowl and add the soften dates. Blend everything together until you get a nice sticky form (maybe you will have to add some water as well).
4. Place this form onto a baking paper and distribute the weight of the form with your hands until you get a flat surface (like e.g. a pizza shape).
5. Put this into the freezer.
6. In the meanwhile you can begin with the "topping".
7. Put the cashews and the lemon juice into a blender and blend them until you get a creamy form.
8. Now you have to take out the base from the freezer, spread the filling onto the crust and put everything back into the freezer for at least 2 hours.
9. If you take it out after 2 hours, you will also have to cut this dessert into little squares, enjoy!!! =)
PS: If you put the remains into a box, you can store these squares for about 5-7 days.
